O’Donoghue’s History: The Guinness Since the birth of Guinness, pubs world-wide have hosted competitions to determine who could pour the perfect pint of Guinness. In Irish Pubs this is known as a "pint pulling" contest. The "perfect pint" has some basic necessary components. It begins with fresh chilled keg, pushed to the draft handle by a mixture of nitrogen and CO2. A knowledgeable bar tender will never rush the "pulling" of the pint, it must be fashioned in two pours. The first pour fills 75% of the glass, rests for several minutes, and is topped with the second pour – a perfect head that is pushed with a higher concentration of CO2. At O’Donoghue’s we pride ourselves on the perfect pint, and are host to a nitrogen generator that removes nitrogen from the atmosphere and stores it to be mixed in the perfect ratio with oxygen and used to push the Guinness to the awaiting, thirsty aficionado (that’s you!). O’Donoghue’s has been visited and accredited by the brew master from the Dublin Brewery.
